The great thing about Rosh Hashana is the pomegranates - loads and loads of them.
And with the festival around the corner, check out this simple pomegranate, mango and mint salsa recipe that will be sure to impress your family and friends.
Follow Chef Yochanan Lambiase's easy instructions to make your very own delicious New Year treat - pomegranate salsa.
What you will need:
Wooden spoon
Glass bowl
1 x pomegranate
1 x de-seeded and diced tomato
1 x diced mango
1/2 x diced red onion
1 x tbsp balsamic vinegar
1 x tbsp olive oil
chopped mint
Ground mill pepper
Sea salt
STEP 1 - Hit pomegranate to your heart's content
Open pomegranate and using the palm of your hand hit first half repeatedly with wooden spoon. No super-human strength necessary. Within seconds all the seeds will be in the bowl. Repeat with second half of pomegranate.
STEP 2 - Throw in some color
Pour diced tomatoes, mango, onion and mint into bowl.
Gently toss the ingredients with spoon.
Drizzle olive oil and balsamic vinegar on top of salsa.
Add salt and pepper and toss salsa again.
FINAL PRODUCT
Your tropical rainbow-colored salsa is ready to go.
