All the openings (and the closings too, I wish we didn't have to), new menus and limited edition dishes, festivals and holidays, special meals and once-a-year events (we wanted to write New Year's Eve, but we realized a long time ago that almost every two weeks there is some kind of "international... day" , and in our places this is a good enough reason for the event).
A chef who hosts and a chef who also hosts, a restaurant that dresses up and a staff that changes places, why not, actually. A dish that gets its own roof (and walls), but also a "hole in the wall" is worth enough for us to report. Eilat and Haifa, Sharon and the Shefala, and Tel Aviv (but by no means only it).
In short, get Israel's food news. And this time - greetings, winks and a lot of joy. And that's just the first dish.
Bon Appetite!
Pizza 180, Tel Aviv
Maayan Simcha's urban tour continues, with the establishment of his Italian tray venture on King George Street in the city, and the establishment of a happy menu of pizza, cocktails and other surprises.
There will be, among other things, smoked tuna bruschetta with crème fraîche, octopus salad with kiwi and Parmesan, shrimp in thyme butter with asparagus, tomato salad with salty cheese and lettuce salad with orange and toasted almonds.
The pizzas, based on sourdough dough, are named after workers and managers who were recruited into the reserves. Natan, Lemishlf represents a pizza with crab meat, Halafinio pickled and Bosha cheese, Amit is an asparagus pizza with crispy shallots and Parmesan, Guy makes a pepperoni and honey pizza, and besides them there are also special combinations such as black tiger shrimp with white corn, margarita of course, and crack pie for dessert.
The cocktail menu accompanies all of these with a nod to the Tel Aviv surfing world. "Surf's Up" (mint rum, sage-vanilla syrup, lime), for example, "Market Margarita" with sun-dried tomato tequila and also an "upside-down" Old Fashioned, with whiskey, Amaro de Angostura and Zaatar bitters.
New menu, Gia
The Japanese-Israeli food refreshes formats, advances hours, updates prices, returns rolls but never stops celebrating.
The new menu heralds "significantly reduced prices" and includes, among others, tuna sashimi, padron yakitori with miso-yuzu aioli, seared salmon futomaki, oriental-inspired cocktails and much more.
Coast to Coast, Bayz Hilton
A new food project led by four local culinary stars salutes the global waterfront from the beautiful view of Hilton Beach.
The project, under the Coast to Coast branding and in collaboration with Beluga Vodka, will bring to the Bayz roof Erez Komarovsky, Avi Biton, Yonatan Rochefeld and Raz Rahab, who will each in turn cook a local-international meal.
Komarovsky will inaugurate the project (Tuesday-Wednesday, August 27-28) with a tribute to the shores of Japan (and Yemen). There will be, among other things, Cubana with beluga caviar, soft egg and red onion, salmon sashimi with citrus ponzo and a sea bar tied with fig leaves on a charcoal grill.
After him (September 9-10) Avi Biton will arrive with a longing for Spain and will cook a large paella, tapas, raw marinated fish and churros for dessert of course.
Jonathan Rochefeld will bring Mexico to Tel Aviv (September 17-18) with pico de gayo, guacamole, ceviche, tortillas with chicken with chipotle and lime, white sea fish or small shrimp and tuna or sirloin to share with nachos and white corn.
Raz Rahab will round off the wet celebration (September 22-23) with a view of the French Riviera, featuring a traditional yet modern boiavez, a Niçoise salad "with a twist", fresh fish and seafood.
Month of the Golan Heights, Brava Genta
The wine bar in Nachalat Binyamin in Tel Aviv celebrates the local produce with a special menu full of praise for the people of the north and their work.
The project, which will begin tomorrow (Monday, August 26), is the result of the bar's collaboration with the "From Land to Man" project, which collects and saves agricultural produce that does not pass the aesthetic barriers of the marketing chains. There will be, among other things, organic mangoes from Moshav Almagor, super sweet corn from Carmelim, blueberries from Kibbutz Elrom, Riesling from Tel Shiphon Winery, wine from Hari Galil Winery, cheeses from Greenlee Dairy and Hader Halav Dairy.
These will "turn" into polenta, grilled Camembert cheese with mango honey and fermented chili, green beans in miso sauce, a cheese platter and a pâtissier tart with plums.
Israel Aharoni, Cinematheque Tel Aviv
The Israeli chef, who is also an avid film buff, is a guest on the "Eating Movies" podcast for a conversation-recording-screening-fun combination.
The event will kick off on Thursday (August 29, 8:30 p.m.) with a live recording of the podcast episode from the Cinematheque, which will include touches on the history of cinema and the greatness of the act of singing in the rain, and will continue with a screening of "A song in the rain", Aharoni's favorite film.
