Double chocolate, double indulgence: Perfect cookies for ice cream sandwiches

These chocolate cookies stand alone as a tasty treat, but they can also be transformed into a divine ice cream sandwich.

These chocolate cookies are a delightful indulgence on their own, but they can easily be transformed into a heavenly ice cream sandwich.

We challenged Sara Miedzigorski to rise from the couch and whip up these particularly decadent chocolate cookies, and then take them to the next level by turning all that delightful richness into an ice cream sandwich.

Believe us when we say they are perfect just as they are, alongside a strong cup of coffee or as a treat for both kids and adults alike.

Ingredients:

2 eggs

180 grams sugar

110 grams brown sugar

125 grams butter

200 grams dark chocolate

180 grams flour

3 tablespoons cocoa powder

1 teaspoon baking powder

A pinch of salt

Vanilla ice cream

Instructions:

1. In a mixer, combine the white sugar, brown sugar, and eggs for about 5 minutes, until a smooth, shiny batter forms.

2. Melt the butter and dark chocolate in a saucepan until combined.

3. Mix the chocolate mixture with the sugar and egg mixture, stirring well.

4. Add the remaining dry ingredients to the batter and mix thoroughly.

5. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit).

6. Using a spoon, drop small circles of batter onto a baking sheet lined with parchment paper.

7. Bake for 10-12 minutes, being careful not to overbake the cookies.

8. If desired, once cooled, spread vanilla ice cream on half of the cookies and top them with another cookie to create the delicious sandwich.
