On hot days, the last thing we want to do is spend time in the kitchen, so we search for quick solutions for a light and enjoyable dinner. This bruschetta is a real hit. A beautiful drizzle of olive oil, a quick toasting, quality Manchego cheese (good cheese is a must), a few vegetables, olives, and herbs, and you’re ready for an especially crunchy bite.

Ingredients:

1 baguette

1 garlic oil spray

1 cup thinly sliced cherry tomatoes

250 grams thinly sliced Manchego cheese

1/4 cup finely chopped Kalamata olives

1/2 cup basil leaves

Instructions:

1. Slice the baguette diagonally and generously spray both sides of the slices with garlic oil spray.

2. Bake in a preheated oven for about 10 minutes until golden.

3. Place thin slices of cherry tomatoes on each toasted slice, spray again with garlic oil, and top with a slice of Manchego, basil leaves, and a quarter teaspoon of chopped olives.
