What you will need:Wooden spoon
Glass bowl
4 x eggs
Spatula
Non-stick fry pan
1 x diced red pepper
1 x diced yellow pepper
1 cubed, peeled, potato
1 diced red onion
Optional - chopped parsley or coriander
4 -5 tbsp olive oil
Ground mill pepper
Sea salt Use a medium flame. Fry your cubed potatoes for 5 minutes. Very important the cubes are the same size. Add some flavor with salt, pepper. After 5 minutes, add the red and yellow peppers. Give it a toss with the spatula. Throw in the red onion and cook for one to two minutes. Drain excess oil in a bowl. Pour in egg in frying pan. Shake the pan. Flick the omelet and pat down with spatula.
