Renowned food blogger and recipe creator, Rotem Liberzon, is back with another hearty, colorful dish. This time, she presents nutritious red lentil patties, rich in flavors and herbs. The patties are baked to perfection and then simmered in a thick, sweet-sour sauce for a delicious finish.
Red Lentil Patties

Ingredients
For the patties:
2 cups red lentils
1 onion
½ cup chickpea flour
1 cup chopped parsley, cilantro, and mint (mixed)
Salt, to taste
Black pepper, to taste
½ teaspoon turmeric
For the sauce:
3 tablespoons soy sauce
3 tablespoons maple syrup
Juice of 1 lemon
1 cup water
3 orange bell peppers, sliced into thin strips
2 carrots, peeled and cut into thin strips
Preparation
Making the patties:
1. Boil the red lentils in water for about 15 minutes until soft. Drain and transfer them to a food processor. Blend the lentils with the onion, chickpea flour, and herbs until smooth.
2. Add salt, pepper, and turmeric to the lentil mixture. Stir well, and form small, flat patties about the size of a ping-pong ball. If the mixture doesn't bind well, add more chickpea flour.
3. Heat the oven to 180°C (350°F).
4. Brush the patties lightly with olive oil and place them on a baking tray lined with parchment paper. Bake for 20 minutes until golden brown and firm.
5. In a large, flat pan, heat the soy sauce, maple syrup, lemon juice, and water over high heat. Stir until the sauce thickens slightly.
6. Add the bell peppers and carrots to the sauce, cooking for about 10 minutes until tender.
7. Add the baked lentil patties to the sauce and cook for about a minute on each side, ensuring they are well-coated. Serve immediately with a side of white rice.
