This time, we challenged Guy Ordever to create a recipe for mochi, the famous Japanese dessert, and not just any mochi—strawberry-flavored mochi! Did he succeed? In our opinion, yes.
Ingredients:
100 grams sticky rice flour
30 grams cornstarch
35 grams sugar
180 ml milk
2-3 drops strawberry food coloring
15 grams butter
For filling: 150 ml whipping cream
50 ml dairy cream
1-2 tablespoons condensed milk
3 tablespoons strawberry puree
Preparation Instructions:
1. In a microwave-safe bowl, mix together the sticky rice flour, sugar, milk, and strawberry food coloring. Microwave in 30-second intervals, stirring until fully dissolved.
2. Cover the bowl with plastic wrap. Steam for 20 minutes or until the dough becomes transparent. Then, add the butter and stir until the dough is well combined.
3. Knead the dough until you get a soft, stretchy consistency. Let it cool for 45 minutes.
4. In a mixer bowl, combine all the filling ingredients and mix until the mixture thickens.
5. Flour your work surface and the dough with cooked sticky rice flour (so it won’t be too sticky). Flatten the dough into a circular shape. Place the filling in the center of the mochi wrap. Pinch the four corners of the wrap together, then pinch the remaining corners together.
6. Dust the bottom of the mochi with cooked sticky rice flour or cornstarch.
7. Gently brush the assembled mochi with a brush to remove any excess flour.
