This recipe is perfect for kids starting to cook on their own. Keep a container of cooked rice, a jar of prepared sauce, and pieces of chicken (pre-cooked if preferred) in the fridge, and they can prepare the rest completely on their own.
The sauce is made with the holy trinity—soy sauce, lemon, and honey. This trio will never disappoint you. Ginger and chili add a nice touch, but some kids (like my youngest) prefer no spiciness at all. You can adjust according to taste. The sauce is also great for making noodles, stir-fried beef, and green vegetables like broccoli, asparagus, and green beans. In winter, I replace part of the lemon juice with orange juice.

Serves 4
Ingredients
4 cups cold cooked rice (from 2 cups of rice)
500 grams chicken breast, cut into strips
¼ head of cabbage, cut into strips
2 carrots, cut into strips
1 red bell pepper, cut into strips
3 tablespoons oil
1 tablespoon soy sauce or a pinch of salt
For the Sauce:
4 tablespoons soy sauce
2 tablespoons lemon juice
2 tablespoons natural maple syrup or honey
2 garlic cloves, crushed
2 cm fresh ginger, grated
Instructions
1. Mix the sauce ingredients in a bowl and set aside.
2. Marinate the chicken strips in a bowl with 1 tablespoon soy sauce for about an hour (a good time to cut the vegetables if not already done). Skip this step if using salt instead of soy sauce.
3. Heat a wok or large pan with 2 tablespoons of oil and stir-fry the chicken strips until they change color (if not using soy sauce, add salt to taste at this stage). Remove the chicken from the wok and set aside on a plate or bowl.
4. Add another tablespoon of oil to the wok and stir-fry the vegetables for 1-2 minutes.
5. Add the cooked rice, chicken, and sauce to the wok. Stir and fry together for about 2 minutes.
